I'll be honest and confess that there are many times I struggle at the end of the day to hit my fat goal. For most of my life I was a low-fat eater and now that I'm supposed to be eating ALL THE FAT, I struggle y'all.

While I don't think any diet is perfect, for me, the Keto diet brought with it a big learning curve. For my husband, not so much. But I had to unlearn everything I had learned in the past. I had to completely change the way I thought about high fat foods. And that wasn't easy.

Through this lifestyle change, I've learned that one of the big helps to eating Keto is to always have high-fat items on hand. It's highly important that you have items you can easily put together or simply grab from the refrigerator or freezer.

Foods that you can prepare in a pinch are a necessity.

The Keto lifestyle is all about high fat, moderate protein, and low carb intake. For many of us, carbs are just a normal part of our lifestyle. But with the Keto diet, it's important to cut out the majority of carbs so that your body can enter into a state called Ketosis. This is where the body uses fat as fuel, rather than glucose.

Why is this a good thing? Because it uses the fat stored in your body and you begin to burn fat resulting in weight loss!

I know it's hard to comprehend, especially if you don't understand how the body works. When my husband told me he wanted to try Keto, I was not on board with his decision at all. I couldn't understand how eating so much fat was supposed to help you lose weight. But there's science behind it, I promise.

One of the things I miss about not eating carbs is the crunch from either crackers or chips. Especially those store-bought cheese crackers. You know the ones I'm talking about. But there really is no room for them in the Keto lifestyle. They are so high in carbs that just a small handful would put me over my daily carb allotment.

So I had to find an alternative that was acceptable to this new lifestyle. It was so much easier than I thought it would be. There's such thing as Keto Cheese Its, or maybe you prefer Cheese Nips, that you can make at home and they are pretty darn incredible. But if baked cheese crackers aren't your thing, these Almond Flour Crackers are pretty darn amazing, too.

I don't even know if I can call this a recipe because these Keto Cheese Crackers truly are so easy to make. All you need is thinly sliced cheese to make these low carb cheese crackers. I use the Sargento brand, but other brands might work. I've only tried Sargento and I know it works so I stick with it.

For these baked cheese crackers, I used Sargento's cheddar cheese slices. The thinner the slice, the crunchier the cracker.

The reason you need a thin sliced cheese is so that you get a really good crunch, just like a regular cracker. That's the best part of crackers, right? The thinner slices don't spread out as much when you're baking them either so they're less likely to spread into each other.

A Keto lifestyle definitely isn't a cheap lifestyle. But what's great about these Keto-Friendly Cheese Crackers is that they're pretty inexpensive to make. A package of cheese is normally around $3 -$4, unless you find it on sale. So you can make a big batch of Keto Cheese Its for about $4 or less.

If you wanted you could also sprinkle on some herbs or spices. Honestly though, this Keto Cheese Crackers recipe really doesn't need anything else added to it. It's pretty darn perfect just the way it is.

How to Make Keto Cheese Crackers

Y'all, when I say these Keto Cheese Crackers are easy – I mean they're easy.

All you need to do is take a thinly sliced piece of cheese and cut it into quarters. Each slice of cheese will get your four high-fat crackers perfect for the Keto lifestyle.

Line a baking sheet with parchment paper and then transfer each of the squares of cheese to the baking sheet. Place them about 1/2 inch apart so that when they melt they won't melt together. This is why you need a thin slice. You can use thicker slices but they will melt down more and in my experience, you don't always get a nice crisp cracker.

Place the baking sheet into an oven heated to 300° F and bake for about 15 – 20 minutes, or until crispy.

Carefully take the baking sheet out of the oven and allow the crackers to cool for a few minutes before removing from the parchment paper.

Keto Cheese Its

I think these low carb cheese crackers are best when eaten right away. When they're eaten right out of the oven, you won't even miss your regular ole cheese crackers, y'all.

If you happen to make too many baked cheese crackers (how is that even possible?), you can store them in an airtight container and eat them the next day. I wouldn't keep them longer than that.

I think the texture of the cracker changes slightly but honestly, they're still good. Since my husband and I are both Keto, we rarely have any left over.

What Kind of Cheese Do I Use for these Baked Cheese Crackers?

I found that when making baked cheese crackers, the best cheese slices to use are the thin slices. If the slices are too thick, as the cheese melts in the oven, the cheese spreads too much and it becomes one big melted cheese mess.

The best cheese, in my opinion, is the Ultra Thin slices from Sargento. Each slices when cut into fourths makes four crackers. With an entire package of cheese, you can make a large batch of Keto crackers.

The best variety of cheese to use is cheddar cheese. My husband prefers sharp cheddar while I prefer mild cheddar. I would not use a cheese like Provolone because it just doesn't turn out the same. Stick with a cheddar cheese for best results.

How Do I Store Leftover Cheese Crackers?

If you happen to have leftovers, you can store them in an airtight container. I like to use glass containers, but any type of airtight container will work. You could even use plastic storage bags if you prefer. Just make sure you squeeze out all of the air before sealing.

I will warn you that not eating them right away will change the texture a bit. My suggestion is to just make what you can eat without any leftovers. If you have to store leftovers, I would eat them within a 24 hour period. After that and they're just not good anymore, in my opinion.
